Working from home, I fall in to the trap of a sandwich or realising it is 3pm and I haven’t even eaten. So this year, I have took on the challenge to not only transform the way I eat, but hopefully how you do to. So welcome to the ‘Let’s Do Lunch’ series. This low calorie, punchy salsa’d dish is ideal to pack for work. Ready in ten minutes, you can make it in the morning so it is super fresh. It is so super simple to make, has a fiery kick and although the ingredient list isn’t long, the flavour is all there.

Welcome to a new year of ‘Tried and Tasted Tuesday‘. If you are not familiar with this segment of the site, it’s a fortnightly recipe that I have made and tried from either a cook book, magazine or website. It has proven really popular and I hope you will love the recipes I have planned for January. First up is comfort food at it’s highest, macaroni cheese. With a hidden twist of added cauliflower, it’s a great way to get a vegetable in to fussy eaters. Topped with a crumb that has hidden depths, ready in thirty minutes and makes a batch big enough for leftovers. This recipe is from Jamie Oliver’s 30 Minute Meals, find it here.

Roasted Tomato and Red Pepper Soup

I love soup, it is such a comforting meal. But I’ve never actually created my own, I know right. After realising just how much sugar went in to known brands; can you believe there are 5 teaspoons in one can of Heinz? I decided to re-evaluate buying them, especially because Evie is super confident with liquid on a spoon now too. What pushed me to actually do it, was buying a fancy new hand blender in the sale. I had a heap of tomatoes that needed using up and how better than in a soup. January has been so grey, it’s lovely to spoon in some warmth.

New for 2018

Hello and happy new year! I won’t be back in to the routine until next week, but I wanted to pop on and let you know what to expect in the way of newness from the site this year. Now that Evie is more independent and settled at nursery, I feel it is the right time to really throw my weight behind ‘my brand’. Gosh, that sounds like such a millennial cliche doesn’t it. But I am The Mother Cooker and I am sincerely proud of what I have achieved. I just haven’t had the time to dedicate myself to it fully, being a mother had to come first and it always will. But I have so many ideas and something has clicked in me to really put the work in this year. Maybe it’s that I think we are finally settled in this new house (we’ve moved four times in two years), I have an office and a bigger kitchen etc.

The first thing you might notice is that ‘Evie’s Corner’ has now changed to ‘The Little Cooker’, mainly because Dey bought Evie the cutest apron to match mine with her very own matching logo. I simply had to change it and I feel it’s a little less personal. I will be dedicating a lot more content to food for little’s this year, it always does really well and I get inundated with mothers asking me for help. But without further rambling, below are the new categories for this year. I’d love any feedback via Twitter or Instagram.
