Spiced Blackberry & Pear Crumble

As blackberries are really coming in to their own now and I have seen a heap of my online friends foraging for the beautiful, deep purple fruit. I thought I’d inspire you all to throw them in to a gently spiced, super comforting crumble. Amazingly simple to make, fulfilling and not overly sweet, I promise you will be making this over and over in to the autumn.

Paired up with just ripe conference pears, nutmeg, cinnamon and cloves it is the perfect balance of naturally sweet with an after hit of spicy warmth. All you need to do is, top the fresh out of the oven crumble, with deliciously vanilla melting ice cream. I hope it becomes a firm favourite in your household.

Pineapple, Passion Fruit & Coconut Tarts

As January is finally over, wow that was a long month right? I’m looking forward to Spring, I know it’s not here yet. But as soon as I see daffodils, I get excited for bright food, flowers and the prospect of sunny cold days. This recipe is inspired by a meringue I saw in the latest edition of Sainsbury’s magazine. Combining pineapple, coconut and passion fruit. I’ve wanted to practice my pastry skills a bit more and these tart cases have remained unused since I bought them.

Shortcrust pastry, caramelised pineapple, coconut cream and shavings, topped with a helping of tangy passion fruit. Flavours that simply go together, a mixture of textures and tangs that can transport you straight in to Spring, sort of.

Individual Chocolate Cakes

Happy national chocolate cake day, I’m guessing this is the best day ever for some of you right? A day to completely indulge in not only cake, but chocolate cake. I don’t particularly have a sweet tooth, I’m looking forward to national cheese day more than anything if I’m honest (roll on June 4th). But I can completely appreciate a good piece of cake, and that is why I have created cakes the perfect size for one. So there is no need to share and you can completely consume yourself in moist chocolate sponge, chocolate buttercream and a decent helping of dark chocolate topping. If you really wanted to impress your friends at a dinner party, they would be perfect for that too. Did someone say Galentines? You’re welcome, enjoy!

Spiced Apple & Salted Caramel Doughnuts

As we are nearing the end of October, I wanted to get at least one recipe in using Apples. They are everywhere at this time of year and I like no better pairing than apple with a bit of spice. When I was thinking of what glaze to make, I remembered how tasty this batch of Salted Caramel was and the combination was born. Autumn is by far my favourite season, I completely and utterly indulge in comfort foods. And what better comfort food than doughnuts right? I’m hoping I have got the balance of flavours right and you can taste a little of everything, without one overpowering the other.

Indulge away, make them for bonfire night, eat them whilst the glaze is still warm, eat the glaze from the bowl, take a bath and a plate of doughnuts. Basically, enjoy!

Banoffee Bread With Whipped Cinnamon Cream

Hello all, it’s been a long time coming but I am finally back blogging. Two house moves, a toddler, family health. It’s all pulled me away, but it has also got me super excited to blog again and I have so many ideas for my favourite season of all, Autumn. The season of comfort food, indulgent puddings, warming stews and soups. With some of my favourite ingredients coming in to season, I simply can’t wait to share all of the recipes I have created with you. I hope that through the dark nights and early mornings, you find comfort in my food and it perks you up or wraps you like a blanket.

So lets kick things off with this Banoffee Bread, a spin on my traditional Banana Bread, this has indulgent toffee sauce and lovely whipped cinnamon cream. Easy to make and with all that banana, surely it counts as one of your five a day? I really hope you like it.
