Sweet & Spicy Houmous Bowl

Houmous is super versatile and you can make so many different options, I absolutely adore the roasted red pepper one you can get at Nando’s. My dip is spicy and sweet at the same time, a perfect balance. A great tang of lemon, but without the traditional tahini. Pair any crunchy spring vegetable with it, spread it on a wrap and add some halloumi. It is moreish and I couldn’t stop eating it.┬áSuper quick to make too.

Evie’s Favourite Books

I’m finally getting around to writing this, after wanting to share Evie’s favourite books for such a long time. E is such a bookworm and it is something I am most proud of. Me and her Dad have read to her since the day she was born, even through all of that newborn exhaustion, we always found time to read to her. Her first ever books were ‘Slow Snail’ and ‘The Very Hungry Caterpillar’. She still has them, but her library has grown vastly. That wouldn’t have been possible without Sarah at Penguin, she is quite possibly one of the nicest humans around. Her love of books is so enthralling, you are simply drawn in. I can’t thank her enough, for all of her and Penguin’s generosity. Evie literally lights up when she gets books in the mail.

Today I held a lunch for my Mother and Mother-in-Law, after spending Mother’s day with my own daughter and being spoiled by my Husband. I planned to spoil the ladies in my life on a different weekend. I thought it was a great opportunity to set the table for Spring and share with you how you can create something at home. A beautiful tablescape doesn’t have to expensive and can easily be achieved with a few simple things.

There’s nothing quite like a refreshing drink, sitting out in the back garden with the sun on your face. Ok, so it still might be a little chilly, but we have been getting those glorious days where you want to soak in every last ounce of sunshine. Because let’s face it, those days are rare here in England. Spring is one of my favourite seasons, I love watching all of my plants bloom to life, lighter evenings and feeling that little bit more inclined to get up out of bed.

For a long time I have struggled with recipes for one, I find myself cooking alone a lot of the time. Being a busy, stay at home Mom I often turn to eating my daughters leftovers or reaching for eggs on toast. So I decided to start eating better and put more effort in to developing recipes for one. You could make these for lunch, solo dinners, or they might come in handy if you are a student. Either way, indulge yourself, feed yourself properly. I think that, especially Mom’s forget to eat well and it needs to change. I’ll try and keep the recipes quick, because who has the time really! I hope you enjoy them and the ingredients are easy to pick up on your weekly shop. I will also try and make as many with similar ingredients, so you don’t have to buy obscure things or spend a lot of money. Saving time and money is what we want.
