Mediterranean Style Quinoa Salad

I have been desperately trying to eat better, I have been on a semi diet for about four weeks now. I say semi, because I’ve totally indulged in rhubarb crumble, ice cream cones, strawberry truffles…you get the point. I started eating a porridge that contained quinoa, I read up on the benefits of eating it and they are pretty spectacular to be honest. Twice as much fibre as other grains, extremely protein rich. But let’s face it, although it has a semi nutty taste, it’s pretty boring. A bit like cous cous and brown rice, you need to pack it with flavour. So this salad was born, the dressing is based around what I used for my bruschetta. I’ve also gone a bit wonky and added raw sweet potato in it, but you know all those truffles!

Shrimp Pad Thai

This bowl of rainbow veg is yummy, filling and super satisfying. You can either keep the shrimp or remove it for a vegetarian option. In all honesty, I think you can add any veg in to a pad Thai as long as they are nice and crunchy. I was going to add Edamame to mine, might do that next time. I feel this would be so great to take to work too, if you like eating it cold. In all honesty, I’d serve it as soon as it’s ready. Hot, salty, tangy and sweet.

Turkey Chilli

A few years ago, my brother-in-law gave us a recipe for turkey chilli. I think it was from a diet he and his wife were following at the time. Over the years I’ve adapted it and thought it would be great to share with you. Turkey mince is much lower in fat (7%) than other meat mince, making it great if you are doing weight watchers etc. Making meals you could adapt along with weight watchers was actually a request through my Twitter. So I thought this would be a great, quick and super easy meal for a mid week evening. Turkey mice really is in-expensive too, so it’s an all round winner.

Bruschetta

Tomatoes are one of my favourite things to eat and this bruschetta is one of my all time favourite snacks or starters to a meal. Plump, juicy tomatoes, with garlic, basil and buttery baguette. I would genuinely eat an entire baguette of this stuff. Super straight forward to make, packed full of flavour. I really hope you enjoy it as much as me.

Loaded Parsnip Fries

Happy Friday everyone, thought I would pop up a recipe that is not only quick for the weekend, but super tasty too. If you are anything like me, loaded cheesy fries are an absolute must of a side dish. Along with lobster┬ámac & cheese. But we are just sticking with the fries today, I’ve swapped out normal potato for some parsnips. Now please stick with me, it’s a great way to get some veg and I totally thinks parsnips are a little underrated. You can totally use them in more ways than on a Sunday roast. They are inexpensive, loaded with flavour and a heap of vitamins and iron.

Ok, so I’ve cut out the carbs, but loaded fries are supposed to be an indulgence right? Don’t you worry, my magic cheese sauce will have you wanting to lick the plate. In fact, I’d go as far to say that you will LOVE this cheese sauce. Add in a rainbow salsa and well, you’ve got something to impress at the dinner table. Who needs restaurant sides when you can make epic ones at home, now only if you had a burger to go with them….stay tuned.
