Vegetable Noodles

Vegetable noodles or ‘voodles’ are so amazingly easy to create, you could use them as a base for a dish instead of carbs, or as a side like I am. This is quite possibly one of the easiest recipes of mine to date, I feel quite a cheat calling it a ‘recipe’ but alas. Ready in six minutes, a great way to introduce vegetables to the littles. Evie simply thinks the are ‘nuuudles’, she ate a whole bowl. Packed full of vitamins, you can either eat them completely raw or blanch them in boiling water for two mins, drain and dress.

Ginger & Tomato Baked Cod with Lime Courgetti

For my next instalment of tried and tasted Tuesday, I’m turning to fish and the wonderful Abel & Cole. Honestly, I’m not comfortable cooking fish but this is so easy and absolutely delicious. This recipe even made my husband try courgette, after refusing at first and wanting rice. He reluctantly tried them before I was finished cooking and he was sold. We kept them raw too, so huge props to this recipe. We loved it so much, that we have eaten it again. I most certainly recommend it, ready in under 30 minutes and packed full of flavour. Healthy too, which I guess is always a bonus.

Mediterranean Style Quinoa Salad

I have been desperately trying to eat better, I have been on a semi diet for about four weeks now. I say semi, because I’ve totally indulged in rhubarb crumble, ice cream cones, strawberry truffles…you get the point. I started eating a porridge that contained quinoa, I read up on the benefits of eating it and they are pretty spectacular to be honest. Twice as much fibre as other grains, extremely protein rich. But let’s face it, although it has a semi nutty taste, it’s pretty boring. A bit like cous cous and brown rice, you need to pack it with flavour. So this salad was born, the dressing is based around what I used for my bruschetta. I’ve also gone a bit wonky and added raw sweet potato in it, but you know all those truffles!

Shrimp Pad Thai

This bowl of rainbow veg is yummy, filling and super satisfying. You can either keep the shrimp or remove it for a vegetarian option. In all honesty, I think you can add any veg in to a pad Thai as long as they are nice and crunchy. I was going to add Edamame to mine, might do that next time. I feel this would be so great to take to work too, if you like eating it cold. In all honesty, I’d serve it as soon as it’s ready. Hot, salty, tangy and sweet.
