Spicy Chicken & Sides

We love chicken in our house, but this year we’ve made a pact to not get take away and cut down on eating out to try and save some money. I also love cooking for my friends and family, so making sharing dinners is a lovely thing. The main element in this, is the succulent, spicy chicken. Then I’ve knocked up some super simple sides to get you started, you can adapt them how you want. A quick rocket and spicy sweet potato salad, with fruity cauliflower rice. Load it up in to pittas with some halloumi, add a spicy or garlic mayo, heap on some avocado, corn on the cob with heaps of butter. Just get stuck in, save the left overs for later, how amazing would it be for work? Just don’t forget that squeeze of lime, it pulls it all together.

The rub for the chicken is made in a batch that you can pop in your cupboard and save for later, rub it in to wings, add it in to casseroles, rub it in to fish to make tacos, it’s versatile. It will need a lot from your store cupboard, but hopefully you have a lot of the spices already and if you don’t, think of how many tubs of spicy rub you can make all year. It’s worth it, promise.

Spicy Prawn Linguine

So pasta is the best thing in the universe right? It is my go to comfort food, if I feel ill I whip up a batch of macaroni cheese and the world is complete again. Add seafood to pasta and I am sold, I look for it on every new menu and will 99% of the time order it over anything else. But enough about me and my overwhelming desire to be pasta. This dish is quick and easy to make, in fact you can do the whole process in 30 minutes. Something you guys have told me is a key thing to you making a recipe. The garlic and chilli are a great base for the tomato sauce, and the samphire brings a lovely salty texture.

If you are a heat lover, simply add more chillies and of you are really, really short of time, simply whack all of the ingredients needed for the sauce in a blender. This will create a smoother sauce, but shouldn’t take away any flavour. Hope you love it, just off to go and lick the pan.

Chicken Noodle Broth

The other night, my Husband was out with his friends and it had got to 6:30pm and I realised I hadn’t eaten all day. Terrible I know, but sometimes I literally forget to eat. I’ll snack on the crusts of my daughters sandwich or steal a few spoonfuls of her porridge to check the temperature and I’ll think I’ve eaten. So there is a hungry me and lack of time, as it’s nearly Evie’s bed time. What can I cook? I have some chicken and some vegetables, I don’t want pasta. I check the cupboards, find some noodles and think I’ll just make Chicken Noodle Broth. Turns out it was pretty tasty, so I made it again for lunch Saturday and decided to share it with you guys. Sometimes recipes come out of nowhere, and this super quick supper does not disappoint.

Hot & Sour Red Thai Prawn Noodles

Thai food is high on my list of favourite foods, add seafood and I am sold. Totally and utterly sold. We have a great Chinese market here in Birmingham and when I paid a visit the other day, I picked up some egg noodles with the intention of making this dish. A coconut base, infused with red Thai flavourings and a squeeze of lime to give the perfect balance of hot and sour. Spooned on top of a heap of noodles, it would be great for lunch or dinner. Super quick and easy to make and completely delicious, well I think so.

Completely fresh ingredients, with prawns bought at the fish market and a sprinkle of coriander from my very own garden. What’s great is, you can make a huge pot and just pop it in the middle for the table and watch your guests spoon in the goodness. If you wanted to make it for a group of more than 3, just double up on the ingredients.
