This bowl of rainbow veg is yummy, filling and super satisfying. You can either keep the shrimp or remove it for a vegetarian option. In all honesty, I think you can add any veg in to a pad Thai as long as they are nice and crunchy. I was going to add Edamame to mine, might do that next time. I feel this would be so great to take to work too, if you like eating it cold. In all honesty, I’d serve it as soon as it’s ready. Hot, salty, tangy and sweet.
The other night, my Husband was out with his friends and it had got to 6:30pm and I realised I hadn’t eaten all day. Terrible I know, but sometimes I literally forget to eat. I’ll snack on the crusts of my daughters sandwich or steal a few spoonfuls of her porridge to check the temperature and I’ll think I’ve eaten. So there is a hungry me and lack of time, as it’s nearly Evie’s bed time. What can I cook? I have some chicken and some vegetables, I don’t want pasta. I check the cupboards, find some noodles and think I’ll just make Chicken Noodle Broth. Turns out it was pretty tasty, so I made it again for lunch Saturday and decided to share it with you guys. Sometimes recipes come out of nowhere, and this super quick supper does not disappoint.

Thai food is high on my list of favourite foods, add seafood and I am sold. Totally and utterly sold. We have a great Chinese market here in Birmingham and when I paid a visit the other day, I picked up some egg noodles with the intention of making this dish. A coconut base, infused with red Thai flavourings and a squeeze of lime to give the perfect balance of hot and sour. Spooned on top of a heap of noodles, it would be great for lunch or dinner. Super quick and easy to make and completely delicious, well I think so.
Completely fresh ingredients, with prawns bought at the fish market and a sprinkle of coriander from my very own garden. What’s great is, you can make a huge pot and just pop it in the middle for the table and watch your guests spoon in the goodness. If you wanted to make it for a group of more than 3, just double up on the ingredients.
