Asian Turkey & Carrot Burgers in Lettuce Cups | The Mother CookerToday's tried and tasted comes from Melissa Hemsley's new book 'Eat Happy', you might recognise her as one half of Hemsley Hemsley. The amazing sister food bloggers and authors who have built up a cult following. Creating amazing food and huge advocates of eating healthy, without deviating away from huge flavour. If you are on my newsletter list, you would have seen that this book was one of my top 3 for January. It is packed full of delicious recipes, all in which she declares can be made in under 30 minutes.These turkey burgers caught my eye, because I love turkey as a meat. But it can often lack flavour because of the low fat content, so I usually make it in to a chilli or as a base meat for something that is packed full of other flavours. These burgers do not disappoint, the heat lover in me would add a little more chilli and a tiny bit more five spice. But that is all personal preference. They were very easy to make and in fact Melissa herself replied when I had questions on whether I could freeze some as I had lots leftover. She said a big yes and to defrost them on the morning before cooking them in the evening. So not only is she a great cook, she's very helpful too. ingredients
  • 500g minced turkey
  • 2 carrots, grated
  • 1 onion, grated
  • 3cm piece of ginger, grated
  • 3 garlic cloves, grated
  • 1 egg
  • 1 fresh chilli, deseeded and finely chopped
  • 1 small handful of fresh coriander, finely chopped
  • 1 and a half tsp Chinese five spice powder
  • Sea salt and black pepper
  •  16 crunchy lettuce cups/leaves, to serve
  • Half a red cabbage, shredded
  • 2 large tomatoes, sliced
  • 1 lime, cut in to wedges
Directions
  1. Preheat oven to fan 220c/ Gas mark 9 and line a large baking tray or roasting tin with baking paper.
  2. Combine all ingredients for the burgers in a large bowl, season with 1tsp of salt quarter tsp of black pepper. Mix well to combine.
  3. Using damp hands, divide the mixture and shape in to 4 or 8 smaller burgers. Place on the prepared tray and bake in the oven for 18-20 minutes, turning half way through.
  4. Place each burger in two lettuce leaf cups, adding some shredded cabbage, a tomato, a squeeze of lime and season to your liking.
