It's national porridge day, so I obviously had to share a recipe. I absolutely love indulging in a warm, hearty breakfast. This apple and cinnamon porridge couldn't be simpler, but it is so delicious. With minimal ingredients, you really can go all out with your toppings. I like to keep mine seasonal, so today I have added apple and figs, with a good helping of nuts and seeds too. Sweeten with honey, maple syrup, brown sugar, the possibilities are endless and oh so comforting.

Autumn and winter are the perfect seasons to indulge in a comforting start to the day, I love how versatile porridge is. You can even have a savoury version if you so wish, either way oats are filling and nutritious. Packed full of vital nutrients and vitamins, oats are one of the most nutrient dense foods. Carbs, protein, fat and fiber, you are getting the lot. They help keep your blood sugar level. So eating them in the morning is a great way to start your day and balance your metabolism. Pairing them with fruit is an added bonus to vitamin consumption.

Apple and Cinnamon Porridge

Ingredients
  • 50g oats
  • 220ml milk
  • 1 small apple, half grated, half sliced
  • 1 level tsp cinnamon
  • 1 tsp brown sugar
  • Handful of mixed nuts and seeds
  • Honey (optional)
  • 1 fig (optional)
Directions
  1. Add grated apple, cinnamon and brown sugar to pan on medium heat and cook until sugar dissolves.
  2. Add oats and milk and cook until oats are creamy and softened.
  3. Serve hot topped with sliced apple, nuts, seeds, figs and a squeeze of honey.
