Blueberry Waffles
I’m going to be honest, I’ve had a waffle maker for YEARS. Well, it’s one of those multi tools, I mainly bought it for the sandwich maker part. But it has plates for waffles, maybe I was scared to use it? Anyway, I’ve gotten over the fear and created a wonderful waffle recipe. These are crispy on the outside and fluffy in the middle, super delicious with the added blueberries.
Sometimes you want something different to pancakes, something a bit more filling with a little texture. Making waffles kind of makes me feel like I’ve gone out for a fancy brunch somewhere. You could try and make these a bit healthier by using wholemeal flour. Alas, there’s only 2 tbsp sugar in the whole batch and the batch makes 7-8 waffles. You can also omit the blueberries if you’re not a fan. Maybe add a handful of chocolate chips or some chai spice instead?
Blueberry Waffles
Serves: 7-8

Cook time: 5 mins per double batch
Total time: 26 mins
Ingredients
240g plain flour
4 tsp baking powder
1 tsp salt
2 tbsp sugar
150g blueberries
375ml milk
50g butter, melted and cooled
1 tsp vanilla
2 large eggs
directions
Add all dry ingredients to a bowl (including 130g blueberries) and mix together. Then add all wet ingredients in a separate bowl and mix together. Add dry ingredients to wet and fold to combine.
Pre-heat and grease your waffle iron, I just added a drop of olive oil to kitchen towel and rubbed the plates.
Spoon in around 3 tbsp of batter onto the waffle iron, close and cook for 5 minutes. You might want to test one first. My waffles turned out great at the 5 minute mark. But yours might need longer or less if it’s super hot and fancy.
Keep warm in a tea towel or serve immediately with syrup and leftover fresh berries.
