Caramelised Banana Porridge

I don’t know about you but I have to get up really early and go and work out in the cold. Being a gardener means I am out in all weather and I need a good hearty breakfast to set up my day. This caramelised banana porridge is a superbly simple winter warmer. Quick to make, even quicker to eat and just the right side of sweet. I’ve always been a lover of porridge (oatmeal), it’s just so cheap, easy and versatile.

The amount I have made in this recipe could probably be split between two, but I like a big breakfast as I class it as the best way to start my day. I’ve used coconut sugar in the recipe, but you could always use a light brown sugar as a replacement. I tend not to add any sugar to my oats as the banana and maple syrup add plenty of sweetness. I’m more of a savoury person overall, so don’t like to overkill.

Caramelised Banana Porridge

Serves: 1-2

Prep time: 5 mins

Cook time: 10 mins

Total Time: 15 mins

Ingredients

  • 1 cup (95g) porridge oats

  • 2 cups (500ml) milk

  • 1 banana, cut lengthways

  • 2 tbsp coconut sugar

  • Large knob of butter

  • Pinch of sea salt

  • 1 tbsp peanut butter

  • Handful of chopped nuts (around 30g)

  • Maple syrup

  • Cacao powder to top (optional)

Directions

  1. In one pan, add oats and milk, heat slowly on a low light until at desired consistency. Mine takes about 8 minutes.

  2. In another pan at the same time, add butter and coconut sugar on a low-medium heat, when butter has melted add bananas and swish them around the pan. Leave to sit in sugar mixture whilst porridge cooks.

  3. Spoon porridge into the bowl (I like to keep mine a little creamy) add bananas and other toppings how you desire. Sprinkle with a little sea salt at the end (so worth it!)
