Banana and Coconut Overnight Oats | The Mother Cooker

Overnight oats are a life saver for me, there is nothing I struggle more with than breakfast. I can make something out of nothing for dinner, but breakfast has always been a struggle for me. I've never been a big lover of cereal, and it is far too hot to be over a stove first thing in the morning. If you don't live in the UK, we are in the middle of an insane heatwave (rare) and I simply can't cope. Us Brits simply aren't used to all of this heat and unfortunately we don't have air con. So these overnight oats are a perfect breakfast to prep on the evening and grab and go in the morning. Especially if you have a busy morning routine, if your household is anything like ours...it's mayhem. Absolutely zero cooking required, and lovely and cold to cool you down.

If you remember way back to February, I made a Blood Orange version of overnight oats. You can have so many different combinations and flavours. This basic recipe can be altered with any nut milk or dairy free yoghurt. The toppings are completely and utterly up to you. But I absolutely adore this coconut and banana version. In fact, I'd go as far as to say it's my favourite yet. I hope you enjoy them, if you are stuck for where to get jars, places like Wilkinson are ideal.

Serves: 1, based on a 300ml jar. Simply repeat the process per jar.Prep time: 10  minsChill time: 12 hours*Prepare one jar each night before bed.

Ingredients
  • 70ml milk
  • 40ml coconut yoghurt, I used Onken as it has lovely coconut bits in.
  • 40g porridge oats
  • Half a banana, sliced
  • Squeeze of honey
  • Quarter tsp chia seeds
  • Sprinkle of pumpkin seeds
Directions
  1. Add porridge oats to the bottom of the jar, then milk, then yoghurt, then sliced banana, honey and seeds.
  2. Chill overnight. Mix well before serving.
