Garlic Mushrooms on Toast
When I asked you what you would love to see on these festive recipes, so many of you said you would like a vegetarian starter and main. So this is where these garlic mushrooms come in. The perfect vegetarian starter for your Christmas day dinner. They are so ridiculously easy to make that I sort of feel like I am cheating by calling it a recipe. But anything to take the stress out of Christmas right? These would be even better if you whizzed up some breadcrumbs with a hard cheese and baked them under the grill. Alas, they are just as delicious without. So it is completely up to you if you want to go that extra fancy step.

If not, you can get great mixes of mushrooms at supermarkets like Sainsbury's. These are super garlicky, so maybe have some mints handy if you are spending your first Christmas with your new love. Just a little tip. I like serving them up on a good crunchy tiger loaf, a cheesy loaf would work just as lovely too. Top them with fresh thyme and you are good to go. Garlic Mushrooms on Toast

Ingredients
- 200g mixed mushrooms
- 4 garlic cloves, minced
- 2 tbsp garlic
- Handful of fresh thyme sprigs
- Salt & pepper
- 4-6 slices of tiger loaf
Directions
- Add butter and garlic to frying pan. Once butter has melted, add mushrooms.
- Cook for a few mins until soft, remove mushrooms with a slotted spoon to a bowl, season to taste and cover with a tea towel to keep warm.
- Add sliced tiger loaf to the mushroom pan with a little more butter and fry until toasted and golden.
- Scoop mushrooms on top of toast and serve immediately with fresh thyme.
Make ahead, you could make a batch of garlic, thyme butter weeks ahead and keep it in the freezer. Simply get a block of butter, cool but not hard, add it to a bowl with 8-12 cloves of grated garlic and a handful of picked thyme leaves. Wrap it in baking paper or cling film and roll like a sausage. Freeze and then remove to the fridge the evening before it is needed.
