Roasted Garlic and Parmesan Asparagus
For me, asparagus is best ate simply. Roasted in the oven, popped on a griddle pan or steamed. I enjoy it in things, but I feel these simple ways of cooking help it sing the most. This garlic and Parmesan side is delicious, and so simple I feel like a bit of a cheat calling it a recipe. I love pairing it with crispy dauphinoise potatoes. It also goes wonderfully with white fish and a squeeze of lemon juice. Gosh that is making me dream of summer and homegrown tomatoes for some reason. Amazing how things can take you to another place.
If you're into Bbq season, you could easily achieve this on one too. Simply make a parcel of foil and pop it straight onto the BBQ. So simple and delicious, BBQ's don't have to be meat-centric. Halloumi on a BBQ is just on another level, you can thank me another time. Can you tell I've been smelling a lot of BBQ's just lately? They are making e wish I had one, so I could whip up a feast in the garden. Alas, me or my husband have never quite got the hang of lighting one in our whole ten years together. We'll leave that to my brother-in-law.
Roasted Garlic and Parmesan Asparagus

Ingredients
- 10-15 spears of asparagus, woody ends removed
- 1 tbsp vegetable oil
- 25g fresh Parmesan
- 2 garlic cloves, grated
- 1 tsp chilli flakes
- Salt and Pepper to taste
Directions
- Remove woody ends from asparagus.
- Lay out on a lined baking tray, add the oil, grated cheese and garlic.
- Toss to make sure everything is coated evenly, season.
- Roast in the oven on 200c/gas mark 6 for 15 minutes.
- Sprinkle with chilli flakes and eat immediately.
