Leftover Chicken Sandwich
When we make a roast dinner, we often have rotisserie/roasted chicken leftover; well if the dog doesn’t get it that is. This sandwich was created to try and use it up. It’s also one of my favourite things to eat, so I thought I would share it with you.
It’s exceptionally simple and packed with good things. You could also eat it in a wrap, don’t feel constrained to bread. I often just eat the mix out of the bowl. You’ll probably have most of this to hand and won’t need to go and shop. That’s if you can find a cucumber (thanks Logan!)
It’s creamy, crunchy and packed with protein. All the things we like for lunch, right? Don’t blame me if you get addicted, I don’t make the rules up over here.
Leftover Chicken Sandwich

Ingredients
Rotisserie chicken/roasted chicken
1 avocado
2 spring onions
2 tsp English mustard
2 tsp mayonnaise
Salted butter
1 tsp red pepper flakes or chilli flakes
2-4 slices seeded bread
Cucumber
Salad
Squeeze of lime
If you don’t have spring onions, finely chopped red onion would work too here. I find this recipe rather filling, so often make half a sandwich and save the rest of the mixture for another day.
Directions
Shred up desired amount of chicken in a bowl, I just use two forks to pull it apart.
Finely chop two spring onions, greens included.
Add avocado, mayo, mustard, spring onions, a generous helping of salt & pepper, lime juice and red pepper flakes to the chicken bowl.
Smash and mix together generously, making sure everything is coated. Season to taste.
Butter the bread, spoon on the chicken mixture and add cucumber and salad.
